食物安全中心 的抽查發現,酥皮忌廉湯連整塊酥皮的反式脂肪含量,每百克高達1.6克,等於一個成人每日攝取量的73%。
食物安全中心抽查市面6類59款食物,包括零食、烘焙食品、快餐食物、點心及奶製品等。結果發現,3成樣本的反式脂肪含量超過0.3克,其中牛油等油脂類食品所含的反式脂肪最高,其次是烘焙類食品。
其中一款酥皮忌廉湯連整塊酥皮的反式脂肪含量最高的,達1.6克,等於一個成人每日攝取量的73%。其次是芝士漢堡包及吞拿魚酥皮卷,佔每日攝入限量近4成。而所測試的所有植物油,全部都含反式脂肪。
食物安全中心顧問醫生何玉賢表示,根據世界衛生組織的標準,成人每日的反式脂肪攝取量最高為2.2克,過量吸入反式脂肪可引致心臟病及肥胖,呼籲食品製造商改良食品製作過程,減少反式脂肪含量。
何玉賢又表示,新的食物標簽法明年7月成效,將規定食品製造商在包裝上標明反式脂肪含量,市民選購食物時可留意。

鬆脆中式食品多有反式脂肪
[轉貼]反式脂肪無處不在,食物安全中心的調查顯示,中式食品也不能倖免。有營養師提醒市民,凡是鬆脆的中式糕點,則有可能含反式脂肪,「凡係乜酥物酥,一咬就碎晒嘅糕點,就可能有反式脂肪。」
葱油餅揚州炒飯都有
食安中心的調查發現,中式食品中,葱油餅的反式脂肪含量最高,每份達 0.28克,逼近警戒線 0.3克,其次為豆沙鍋餅及揚州炒飯,每份同樣有 0.11克。
美國註冊營養師梁慧思指出,除了上述食品,須用油類焗製的中式糕點食品均含反式脂肪,食品越鬆脆,可能含量越高。嫁女餅、叉燒酥,甚至杏仁餅也可能含反式脂肪。除非是預先包裝食物,否則市民難以分辨,理論上新鮮食物的含量遠低於加工食品。她建議少吃加工食品為妙,並為子女從小建立均衡飲食習慣,「點樣食都冇得避到零,可以食迷你版,或者同屋企人分享。」
她又指,市民揀選包裝食物時應留意成份標示,就算沒有註明反式脂肪,人造牛油、植物油、氫化植物油、起酥油等成份已暗示食品含反式脂肪。

High trans-fat levels found in 30% of food
The food trade has been urged to reduce trans-fat levels after a Centre for Food Safety study found 30% of 59 items had more than 0.3g of trans fatty acid per 100g. Foods with puff pastry were particularly high.
The highest mean trans fatty acid content was found in oils and fats (2.3g), followed by bakery products (0.48g), milk and milk products (0.3g), other ready-to-eat foods (0.13g), snacks (0.073g), and beverages (0.02g).
A bowl of cream soup with puff pastry (total 315g) had 1.6g of trans fatty acid - with 1.1g coming from the puff pastry. The total trans fatty acid was equivalent to 73% of an adult's daily intake limit while the puff pastry alone amounted to 50%.
The four types of liquid vegetable oils tested contained trans fatty acid ranging from 0.11g to 0.97g per 100g.
The centre's Consultant (Community Medicine) (Risk Assessment & Communication) Dr Ho Yuk-yin said oils and fats, especially margarines, and bakery products like puff pastries, had high trans-fat content. While all vegetable oils tested contained trans-fats, some dairy- or cheese-containing foods contained high trans-fats and saturated fatty acids.
"The food trade is advised to modify the manufacturing process to lower trans fatty acid content in foods, and oils and fats. The trans fatty acid amounts should be stated in the nutrition labels of pre-packaged foods to enable consumers to make an informed choice," Dr Ho said.
